Ingredients

  • 10 Medjool dates, pitted

  • ½ cup crunchy peanut butter

  • 1 cup semi-sweet chocolate chips

Directions

  • Prepare the Dates: Slice each Medjool date open and remove the pit.
  • Fill with Peanut Butter: Use a spoon to fill each date with a small amount of crunchy peanut butter.
  • Melt the Chocolate: In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each, until smooth.
  • Dip the Dates: Using a fork, dip each peanut butter-filled date into the melted chocolate, ensuring it’s fully coated.
  • Set & Chill: Place the coated dates on a parchment-lined tray and refrigerate for 15-20 minutes, or until the chocolate hardens.

  • Enjoy! Store in an airtight container in the fridge for up to a week, or in a freezer-safe container for up to three months (not that they’ll last that long! 😉 )

Notes

  • Optional Additions:
    Sprinkle sea salt on top before chilling for a salty-sweet twist.
    Use almond butter or cashew butter for a different flavor.
    Add chopped peanuts inside the date for extra crunch.
