10 Medjool dates, pitted
½ cup crunchy peanut butter
1 cup semi-sweet chocolate chips
Directions
- Prepare the Dates: Slice each Medjool date open and remove the pit.
- Fill with Peanut Butter: Use a spoon to fill each date with a small amount of crunchy peanut butter.
- Melt the Chocolate: In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each, until smooth.
- Dip the Dates: Using a fork, dip each peanut butter-filled date into the melted chocolate, ensuring it’s fully coated.
- Set & Chill: Place the coated dates on a parchment-lined tray and refrigerate for 15-20 minutes, or until the chocolate hardens.
Enjoy! Store in an airtight container in the fridge for up to a week, or in a freezer-safe container for up to three months (not that they’ll last that long! 😉 )

- Optional Additions:
Sprinkle sea salt on top before chilling for a salty-sweet twist.
