By now you’ve probably tried, seen, or at least heard of the viral “Tik Tok feta pasta”. The basic recipe calls for a block of feta cheese, some cherry tomatoes, onions, garlic, olive oil, and some herbs & spices all baked in the oven, then cooked pasta is added and it becomes a delicious, creamy dish. I love the original, but here’s another take on the recipe.
Ingredients:
- 1 large spaghetti squash
- 1 pint of cherry or grape tomatoes
- 1 small block of feta cheese
- 1 Boursin, flavour of your choice
- 1 small onion, minced
- 2-3 cloves of garlic, minced
- 1 tsp dry basil (or fresh if you have it)
- salt & pepper to taste
- red pepper flakes (optional)
Start by cutting your spaghetti squash in half crosswise, not lengthwise. This way you’ll end up with longer “noodles” of squash. Scoop out the seeds, season with some salt & pepper, and place the squash cut side down on a baking sheet or an inverted UltraPro cover and bake at 350F for 40-45 minutes.
Remove from the oven and let cool 10-20 minutes before scraping/scooping the “noodles” of squash out with a fork.
Meanwhile, place your Boursin of choice and the block of feta in the center of a baking dish or UltraPro. Add the tomatoes. Mince the onions & garlic (I use the choppers for a quick & easy mince) and add them to the dish. Add dry basil, salt & pepper, and red pepper flakes (if using) and drizzle with olive oil. Bake for 20-25 minutes at 400F. If using fresh basil, stir in after baking.
Mix the spaghetti squash noodles into the dish and serve.
