Since September 2024, I’ve been cutting back on refined sugar—but that doesn’t mean I’ve given up on enjoying something sweet! Sometimes, a juicy piece of fruit hits the spot, but when I plan ahead, this chocolate cherry chia pudding is my go-to treat. It’s rich, satisfying, and doubles as a nutrient-packed dessert or a quick, grab-and-go breakfast. Chocolate Cherry Chia Pudding

Ingredients

  • 1/3 cup of ground flax seeds

  • 1/3 cup of chia seeds

  • 2 cups Cashew Milk (or another non-dairy milk of your choice)

  • 4 Medjool Dates, soaked in 1/4 cup of boiled water for 30 min

  • 1 cup frozen sweet cherries

  • 2 tbsp Raw Cacao Powder

  • 1 tsp Vanilla Extract

  • 1 tsp Ashwaganda powder (optional)

  • 1 tsp Collagen powder (optional)

  • pinch of Celtic Sea Salt (or another salt of your choice)

Directions

  • Add chia and flax seeds to a 1L jar or container. Set aside.
  • Add remaining ingredients to a blender and blend until smooth.
  • Pour the mixture from the blender over the chia and flax and mix very well with a fork or whisk.
  • Seal the jar or container and refrigerate for at least two hours (best overnight).
  • Serve on its own, or top with banana slices and/or chopped cherry pieces.
