One of the more fool-proof ways to ferment things like pickles, vegetables in brine, etc. is to use a mason jar with a weight and an airlock. Exposure to the air is what can cause mold to grow on your ferments, so to avoid this we weigh down the solids in the jar with a weight and use an airlock so that the gasses produced by the fermentaion can escape, but air cannot get in. These are the weights I use.
